Country Tomato Soup with Basil Cream

      Title: Country Tomato Soup with Basil Cream

      Yield: 5 servings
 
      3 c  Whole tomatoes, drained,          1/4 t  Paprika
           Reserving liquid                  1/8 t  White pepper
      4 sl Bacon, diced                    1 3/4 c  Vegetable broth
    1/2 c  Finely chopped onion                     INGREDIENTS FOR BASIL CREAM:
      1 md Finely chopped carrot               2 T  Finely chopped fresh basil
      3 T  Flour                             1/3 c  Dairy sour cream
 
  :       Finely chop tomatoes; set aside.  In large saucepan, cook bacon
  until crisp.  Remove; set aside.  Drain bacon drippings, reserving 1
  tablespoon.  Cook onion and carrot in reserved bacon drippings until
  tender.  Stir in flour, pepper and paprika.  Cook one minute, stirring
  constantly.  Gradually stir in vegetable broth and reserved tomato liquid.
   Bring to a boil.  Reduce heat, add bacon and tomatoes.  Simmer 10
  minutes.
  :       In small bowl, combine basil and sour cream.  Ladle soup into
  warmed serving bowls.  Gently spoon 1 heaping tablespoon of basil cream
  into the middle of each bowl.
