Title: Santa Clara Carrots

8 scrubbed carrots 3 mint leaves
2 tb butter 1/4 t salt
Boil unpeeled carrots with mint leaves until just tender and drain. Arrange
carrots in bottom of baking pan, dot with butter, season and cover pan with foil. Bake
at 350 degrees for fifty minutes, turning once or twice.
