Title: San Juan Squash

Serves: 4-6
3 med yellow crooknecked squash 6 slices bacon, or 1/2 c chopped
or zucchini cooked carne adobado
1/3 c finely chopped spring onions 1/2 c dry bread crumbs
Small amount butter or margarine
Salt (to taste)
1 t chile powder (optional)
Slice squash in half lengthwise and scoop out seeds. Parboil for 10
minutes. Put in single layer in shallow pan, sprinkle with salt (and chile
powder if desired), chopped onion, and bread crumbs. Top each half with
bacon slices or cooked carne adobado. Bake at 350 degrees with water
just to cover bottom of pan until squash is tender and bacon is browned.Formatted for Meal Master by Lori Fuller
