Red Pepper Soup

      Title: Red Pepper Soup

      Yield: 6 servings
 
      3 lg Red bell peppers, halved          1/2 t  Dill weed
           Lengthwise, seeded                1/2 t  Salt
      2 T  Margarine or butter               1/4 t  Pepper
      1 md Onion, finely chopped               1 c  Cocktail vegetable juice
      3 c  Italian plum tomatoes             1/4 c  Sliced green onions
      1 c  Dry red wine or beef broth     
 
  :       Lay pepper halves, cut side down, on broiler pan.  Broil 3 to 4
  inches from heat about 15 minutes or until skin is completely blackened.
  Remove from pan.  Place in plastic bag; let stand 10 minutes to steam.
  Peel pepper; finely chop.
  :       Melt margarine in large saucepan over medium heat.  Add onion;
  cook until tender.  In blender container, puree tomatoes and chopped
  peppers.  Add to onion.  Blend in wine (or broth), dill weed, salt and
  pepper.  Bring to a boil; reduce heat.  Simmer 20 minutes, stirring
  occasionally.  Stir in vegetable juice; simmer 5 minutes.  Garnish with
  sliced green onions.
