---------- Recipe via UNREGISTERED Meal-Master (tm) v8.02 Title: Potato Surprise Categories: Ethnic, Native, Native amer, Pixel, Vegetables Yield: 1 batch 5 md Potatoes, peeled & diced 2 T Flour Water 4 Slices bacon, cooked&crumbly Salt 1/2 ts Salt 2 Red onions, chopped 1/2 ts Pepper 1 T Dijon mustard 1 Fresh thyme leaf 2 T Butter 1 c Half and half 1/2 c Mayonnaise Cook potatoes until tender; drain. Melt butter in a saucepan, saute onions until soft. Sprinkle with flour. Add salt and pepper. Slowly add half-and-half, cooking and stirring until sauce thickens. Remove from heat. Cool slightly. Add mustard and mayonnaise. Stir until blended. Turn potatoes into buttered 1 1/2 quart casserole dish. Cover with sauce. Bake at 350 degrees for about 30 minutes.
