Potato Soup
Ingredients:
8 c. water
6 medium potatoes
3 medium leeks
4 Tbsp. butter or margarine
1 egg yolk
Salt and pepper
Directions:
Boil first 4 ingredients until tender. Puree in electric blender,
including the green leek tops. Bring to a boil again and then remove
from heat. Beat egg yolk in small bowl. Add a little hot soup, slowly,
while beating, then slowly return egg mixture to soup. Salt and pepper
to taste. Serve with croutons. Serves 6.
