Pasta-Meatball Minestrone

      Title: Pasta-Meatball Minestrone

      Yield: 5 servings
 
    1/2 lb Lean ground beef                  1/2 c  Thinly sliced carrots
    1/2 lb Sweet Italian sausage               1 t  Italian seasoning
      2 T  Italian-seasoned dry bread          3 c  Beef broth
           Crumbs                              2 c  Canned tomatoes, undrained,
      1 T  Grated Parmesan cheese                   Cut up
    1/4 t  Salt                              1/2 c  Uncooked rotini (spiral
    1/4 t  Pepper                                   Macaroni)
      1    Egg                                 1 sm Zucchini, sliced
    1/4 c  Chopped onion                            Grated Parmesan cheese
      1    Garlic clove, minced           
 
  :       In large bowl, combine ground beef, Italian sausage, bread crumbs,
  1 tablespoon Parmesan cheese, salt, pepper and egg; mix well.  Form into
  3/4 inch meatballs.  Heat 1 tablespoon oil in 4 to 6 quart Dutch oven over
  medium heat.  Cook meatballs, onion and garlic until meatballs are
  browned, turning frequently.  Drain.  Add remaining ingredients except
  zucchini and Parmesan cheese.  Bring to a boil.  Reduce heat; cover and
  simmer 10 minutes.  Add zucchini; cook covered 5 minutes or until zucchini
  is crisp-tender and pasta is of desired doneness.  Garnish as desired.
  Serve with Parmesan cheese.
