Multi-Bean Soup

      Title: Multi-Bean Soup

      Yield: 10 servings
 
      2 c  Dried bean mix                      1 c  Shredded savoy or green
           Water                                    Cabbage
      2 c  Sliced smoked sausage               1 t  Basil leaves
      1 c  Thinly sliced carrots               1 t  Oregano leaves
      1 md Onion, chopped                      3 c  Tomatoes, undrained, cut up
      8 c  Vegetable or beef broth                  Salt
 
  :       Sort beans.  Rinse well; drain.  Place in 6-quart stockpot; cover
  with water 2 inches above beans.  Bring to a boil; boil for 2 minutes.
  Remove from heat; cover and let stand 1 hour.
  Drain beans; add sausage, carrots, onion and broth.  Bring to a boil.
  Reduce heat; cover and simmer until beans are tender but not mushy, about
  30 minutes.  Add cabbage, basil, oregano and tomatoes.  Bring to a boil.
  Reduce heat; cover and simmer 20 minutes.  Season to taste with salt.
